Iced Lavender Cream Oatmilk Matcha Latte (Starbucks Copycat!)

This spring I went to Starbucks hoping to try something a little different than my go-to drinks. The poster of the new seasonal matcha latte with lavender cold foam stopped me in my tracks — a gorgeous layered beverage with purple and vibrant green and all the flavors I loved. You can see my love of tea and lavender in my Earl Grey scones with lavender glaze, and lavender Earl Grey frappuccino.

Naturally it immediately became my new favorite!

So instead of spending all my disposable income on oat milk lattes for the next three months, I figured out how to make it at home (along with their sweet cream cold foam recipe and vanilla sweet cream cold brew!). And now that it’s gone for the summer, I’m glad I did! (I also have a newfound love for oat milk! I have it in my coffee almost daily now because the flavor is so nice!)

If you can make sweet cream cold foam, you can make this drink. I highly recommend using a handheld milk frother, but you can shake your cold foam in a jar instead if you don’t have one.

Your glass or cup should be something you sip from the top, not a tumbler with a straw (or you’ll miss out on the foam!)

Ingredients

  • Matcha powder — I used Republic of Tea matcha for mine. I did not get a pre-sweetened matcha powder or matcha latte blend, since we will be adding our own sweetener.
  • Simple syrup — This neutral liquid sweetener is for the matcha latte. Vanilla syrup works too if that’s what you have, or you can make homemade simple syrup in just a few minutes from sugar and water.
  • Oat milk — find one labeled extra creamy or barista style. I’ve used several different brands, and I’ve seen Oatly and Planet Oat used at Starbucks and our Lowes foods coffee shop, respectively. Planet Oat Barista Style oat milk is more affordable than Oatly, but both are delicious. Chobani (pictured) is actually my least favorite of the three, but I get it when I can’t find the Planet Oat because of the price of Oatly.
  • Heavy cream — For the base of the lavender cold foam.
  • 2% milk — 2% is recommended for making sweet cream cold foam, but I use whole milk if that’s what I have on hand.
  • Lavender syrup — You can use commercially made lavender syrup like Torani or make your own lavender simple syrup from dried culinary lavender, sugar, and water.
  • Purple food coloring (optional) — If you want those gorgeous, vibrant purple and green layers, you will need something to color the cold foam.

Note: For their lavender cream, Starbucks uses lavender powder, colored with carrot and black currant. The ingredients are listed on their website as: sugar, salt, natural lavender flavor, color from fruit and vegetable juice concentrate (carrot and black currant), soybean oil.

Their lavender powder did not seem to be something I could easily recreate, so I made a simple syrup infused with dried lavender flowers and colored the sweet cream with regular old food coloring.

Oat milk and dairy? Why?

I’m sure you noticed this recipe includes oat milk, heavy cream, and regular dairy milk. That’s not an error. While the oat milk matcha latte is dairy free, the sweet cream cold foam is not. And that’s exactly how Starbucks makes it too.

Why use oat milk, then? I was an oat milk novice before this latte, but I’ll tell you the flavor is incredible and really complements the herbaceous flavor of the matcha!

Since I discovered this latte, I’ve had oat milk in my fridge to use in matcha lattes and my morning cold brew. Give it a shot!

How to Make a Starbucks Oat Milk Matcha Latte with Lavender Sweet Cream Cold Foam

Whew!! That’s a mouthful… to say, and (thankfully) to drink!

Step 1: Mix the matcha latte.

We want to make the latte without foaming up the oat milk. That way the lavender sweet cream cold foam will sit nicely on top of the green instead of getting lost in the oat milk foam. It would taste just as good, but you’d lose that beautiful layering.

To make the latte, you’ll add a little hot water to the matcha powder (pictures 1-2) and whisk with a handheld whisk or milk frother (pictures 3a and 3b) until the matcha is smooth and dissolved.

Then you can add the simple syrups and oat milk (picture 4), and stir gently to combine without foaming it up (picture 5). Skim off any foam from the matcha latte if necessary.

Step 2: Froth the lavender cream.

Just mix your heavy cream, milk, and lavender syrup together. Add a couple drops of purple food coloring (optional) to get that beautiful lavender color (picture 6) and blend it with a handheld milk frother (picture 7), or put it in a jar and shake it up until it’s light and foamy like a pourable whipped cream.

Step 3: Pour lavender cold foam on top.

Add some ice (picture 8) and then pour on your cold foam (picture 9). Jiggle the pitcher while you pour the foam on for the smoothest result!

Tips, Tricks, & Notes

  • Starbucks makes it sweeter. Starbucks adds cold foam syrups and flavorings to their already-sweetened vanilla sweet cream. I feel like that’s a bit much so I replace the vanilla syrup with lavender syrup instead of adding both. You can add an extra tablespoon of lavender or vanilla syrup if you like it sweeter, though!
  • Food coloring is optional but beautiful. For the gorgeous purple color, you will need a drop or two of food coloring. Yes, you can skip the food coloring but the gorgeous visual is a huge part of the appeal of this drink for me. Starbucks gets their lavender color from carrot and black currant juice concentrate, and you can find black currant powder on Amazon if you’re looking for a more natural route.

  • Preserve the layers: Starbucks employees on reddit call matcha a “notorious foam hider”. When the cafe shakes up the matcha, ice, and oat milk together, it creates a foamy layer that swallows the colorful lavender sweet cream. That’s why I recommend first dissolving the matcha powder in a little hot water, then gently stirring in the oat milk and simple syrup. Since oat milk says to shake before pouring, skim any bubbles off the top before adding your lavender cold foam. Minimal foam on the matcha latte will give you a much better layering effect with the lavender sweet cream!
  • Jiggle the cold foam: Swirl your cold foam before adding it to your drink and jiggle your pitcher or jar as you pour it for the smoothest foam.
  • Drink from the rim: This drink is meant to be enjoyed from the rim of your glass, not out of a straw. That way you can get some of each flavor with every sip!

Ingredients

For the matcha latte

  • 2 teaspoons matcha powder
  • 1 tablespoon hot water
  • 1 tablespoon simple syrup
  • 1 cup oat milk barista style or extra creamy
  • 1 cup ice

For the lavender cold foam

  • 3 tablespoons heavy cream
  • 2 tablespoons milk 2% recommended
  • 1 tablespoon lavender syrup storebought or homemade
  • 2-4 drops purple food coloring see note

Instructions

  • Add matcha powder, simple syrup, and hot water to a tall glass. Whisk with a handheld whisk or milk frother until smooth.
  • Pour in oat milk and stir gently until fully combined. Skim off any foam if necessary.
  • In a small pitcher or measuring cup, add heavy cream, milk, and lavender syrup. Add 2-4 drops of purple food coloring for a vibrant color. Use a handheld milk frother to blend until thick and smooth, with the consistency of pourable whipped cream.
    If you don't have a milk frother, use a lidded jar instead and shake until thick and creamy.
  • Add ice to your matcha latte and stir, making sure to leave a couple inches at the top for your lavender cold foam.
  • Swirl your lavender cold foam around before adding it to your drink, and jiggle the pitcher or jar while pouring to ensure a smooth pour.
  • Sip your beverage from the rim of your glass (not a straw) to enjoy!

Notes

For coloring your lavender cold foam: Starbucks uses dehydrated carrot and black currant juice to color their lavender powder for the cold foam. You may use black currant powder or butterfly pea flower powder for a more natural coloring option, or skip it entirely.
