Blueberry Simple Syrup for Coffee and Cocktails

Homemade blueberry simple syrup is an easy, versatile way to level up your summer morning coffee or afternoon cocktail. Conveniently made with frozen blueberries, this is a bright, robust syrup that captures the essence of summer blueberries in just 20 minutes.

It’s a key ingredient in my blueberry latte with lemon curd cold foam (coming next to the blog!), and it’s just as delicious in a matcha latte, stirred into cocktails, swirled into a pitcher of fresh lemonade, or drizzled over vanilla ice cream or pancakes! Summer, here we come!

I recently fell in love with a blueberry pie latte at Baguette Magic, one of my go-to local coffee shops. Along with this Starbucks lavender matcha, it’s quickly become one of my favorite warm weather specialty drinks, so I knew I had to make my own version at home. And that meant making some fresh homemade blueberry syrup!

Luckily, it couldn’t be simpler to make — just simmer frozen blueberries, sugar, and water, strain, and store!

Now that I have it in my fridge, do you know how many other things I can use it for? I adore flavoring a matcha latte with lavender syrup or this blueberry syrup, plus you can stir it into a glass of lemonade. Let’s make all your summer blueberry dreams come true!

Ingredients

  • Frozen blueberries: The best part of this recipe is you don’t have to use fresh berries! In fact, since frozen blueberries are frozen at peak freshness, they’re actually the preferred option for the most vibrant flavor.
  • Sugar and water: An equal ratio of granulated sugar and water are the base ingredients of any simple syrup.
  • Optional add-ins: While I make this syrup with blueberries only, you can’t go wrong adding a teaspoon of vanilla extract. Or, simmer the syrup with a half a teaspoon of cardamom to infuse more of a pie-like flavor.

How to make blueberry simple syrup

This blueberry simple syrup comes together in just 20 minutes, and most of that time is hands-off.

Add all the ingredients to a saucepan. (image 1)

Simmer. Bring to a boil, then reduce to a simmer. Since the blueberries will release liquid, it's important to simmer it long enough to reduce the syrup so the flavor is more concentrated. About 15-20 minutes should do the trick (images 2-3).

Strain. Strain the blueberry pulp out with a fine mesh sieve (image 4). Cool and store for up to two weeks! (image 5)

How to use blueberry simple syrup

Blueberry syrup is super versatile! While I made it specifically for my iced blueberry latte, I know I'll be using it for all sorts of things, like:

  • Making the aforementioned iced blueberry latte with lemon curd cold foam — like a blueberry pie in a cup!
  • Stirring into matcha lattes
  • Flavoring lemonade
  • Adding to cocktails
  • Drizzling over ice cream or pancakes

Ingredients

  • 1 ½ cups frozen blueberries
  • 1 cup sugar
  • 1 cup water

Optional add-ins

  • 1 teaspoon vanilla extract
  • ½ teaspoon cardamom for a more pie-like flavor
  • 1 teaspoon lemon juice for a brighter flavor

Instructions

  • Add all ingredients to a small saucepan. Bring to a boil, then reduce to a simmer.
  • Simmer for 15-20 minutes until syrup has reduced by ⅓.
  • Strain syrup through a fine mesh sieve into a bottle and discard blueberry pulp, or save it to add to oatmeal or yogurt. Store refrigerated for up to 2 weeks.
  • Use in coffee, cocktails, lemonade, or over ice cream or pancakes!
