This creamy German cucumber salad, or Gurkensalat, is the perfect companion side dish for bratwurst or burgers. Tangy, sweet, and fresh, it's a deliciously easy summer salad.

Ingredients

  • 2 large seedless cucumbers (English/Hothouse) or 4 regular cucumbers
  • 4 tbsp apple cider vinegar
  • 3 tbsp sugar
  • 1 1/2 tsp kosher salt
  • 1/2 tsp pepper
  • 6 tbsp sour cream
  • 2-4 tbsp minced fresh parsley

Instructions

  • Peel cucumbers and cut into very thin slices with mandoline.
  • Mix together vinegar, sugar, salt and pepper and pour over cucumbers.
  • Marinate at least 20 minutes but no more than an hour. Drain off liquid.
  • Toss cucumbers with sour cream, top with fresh parsley, and serve.

Notes

I like lots of salad, and this would make 4-6 large side servings. If you only eat small portions of salad with your meal, you can halve the recipe.
