Originating in Siena, Italy, ricciarelli are dense, chewy cookies with a bold almond flavor.

Ingredients

Whip egg whites and lemon juice to stiff peaks.

1.

Sift dry ingredients and fold into egg whites.

2.

Fold in extracts and orange zest.

3.

Make oval dough balls and roll in powdered sugar.

4.

Let them dry on a parchment-lined baking sheet for an hour. Then press to help form cracks.

5.

Bake at 300°F for 20 minutes.
