2cucumberspeeled, seeded if necessary, and sliced (about 3 cups)
3-4large tomatoes or 6 Roma tomatoeschopped, about 3 cups
1/2cupred onionquartered and thinly sliced
1/2cupwhite wine vinegar
3tbspchopped fresh basil
1clovegarlicminced or pressed
2tbspred wine vinegar
In a large bowl, mix the cucumbers with 1/4 cup of the white wine vinegar, red wine vinegar, and 1/2 tsp of kosher salt. In a separate small bowl, mix the onions with the remaining white wine vinegar and 1/2 tsp salt.
Let cucumbers and onions marinate for at least 20 and no more than 30 minutes, tossing occasionally to ensure all parts are equally marinated. Drain.
Add marinated onions to the large bowl with the cucumbers, along with tomatoes, garlic, basil, olives, feta, and olive oil. Season to taste with kosher salt and pepper.
