Creamy German Cucumber Salad (Gurkensalat)
This creamy German cucumber salad, or Gurkensalat, is the perfect companion side dish for bratwurst or burgers. Tangy, sweet, and fresh, it's a deliciously easy summer salad.

Ingredients
2
large seedless cucumbers (English/Hothouse)
or 4 regular cucumbers
4
tbsp
apple cider vinegar
3
tbsp
sugar
1 1/2
tsp
kosher salt
1/2
tsp
pepper
6
tbsp
sour cream
2-4
tbsp
minced fresh parsley
Instructions
Peel cucumbers and cut into very thin slices with mandoline.
Mix together vinegar, sugar, salt and pepper and pour over cucumbers.
Marinate at least 20 minutes but no more than an hour. Drain off liquid.
Toss cucumbers with sour cream, top with fresh parsley, and serve.
Notes
I like lots of salad, and this would make 4-6 large side servings. If you only eat small portions of salad with your meal, you can halve the recipe.
